Dinner last night

So, I really do like to have new posts as often as I can, but as many of you know it's the coming up with something to post that gets you. I decided I would blog about dinner last night. Yesterday I conversed with my mom for the 100th time about how picky of an eater Tyler is. We really have conflicting interests when it comes to food and well, that just makes my life really difficult. I try to live up to the stereotypical homemaker persona with the cooking, cleaning, birthing and child rearing, but anymore I fall very short in the cooking area. (And if I'm picking that one as my falling short then you know it's bad because I really don't think I excel in any of the other areas anyways.) However, last nights dinner was a success! Yippee!! Wa-hoo!! Yea!! And it was so simple and easy. I thought I would share it with the rest of you. Because I know that dinner is difficult for many women. The deciding what to make, hoping your family will like it and hoping that you don't ruin it in the process. I'm really good at the whole ruining thing...mostly because my husband is SOOO dang picky. So, it was your basic stir-fry. And when I say basic, I mean basic, just chicken (hubby no likey the vegetables). And this is how I do it... I marinate 2 chicken breasts in an Asian style marinade. The one I used last night was a ginger teriyaki, but I have also used a sesame ginger. You can do it over night or for 30 minutes as most marinades generally do, but sometimes I marinate mine when I buy them that way I tell Tyler I have to make it because it's been marinating. Before you put them in the wok/skillet slice them in a size that would be pleasing to your family. (Ours are cut small.) And when stir frying them I highly recommend using sesame oil. It makes the stir fry taste soo good as opposed to vegetable oils. You keep it in the fridge after opening it to assure it stays good and even though it might last a while it's totally worth owning for when you do cook stir fry. It's not even that big of a bottle so it won't take up too much space. Okay back to the chicken that you are now stir frying in sesame oil. After the chicken looks done pour some more marinade in the pan as sauce. Not a whole lot, but enough to cover the chicken with a little extra to add to your rice...I cook calrose rice in the rice cooker. I prefer the Asian rice to the long grain when making Asian food. Plus it is the "sticky" rice so it's a lot easier for Zach to eat. (Amazingly rice is one of the things Zach eats.) I also steamed peas in the microwave last night. I only eat frozen peas and Zach eats peas too. The Birds Eye singles are plenty for the two of us. If you want to stir fry vegetables with your chicken, you stir fry them in a small amount of sesame oil til they are your desired level of being cooked. Remove them and then cook the chicken. Then add the vegetables back right before you add the extra sauce. I have done the vegetables before because I like them, but I did just peas last night since Zach eats those. The best part was trying to get Tyler to eat a pea. He knew that he couldn't make a fuss otherwise Zach wouldn't want to eat his. I put a pea on Ty's plate and he swallowed it whole with his diet coke. But overall dinner was a success. Zach ate what we ate (minus the chicken) and Tyler went back for more than what I put on his plate. That's a sign that he liked it. So, give this easy recipe a try and let me know if you like it!!

Please tell Tyler I'm so proud of him taking his pea with his diet coke. I'm glad that he's sensitive to the fact that any guff from him could ruin Zach's like for peas forever.

I don't think you fall short in the cooking area! You are an AMAZING cook, always very creative. Just take Tyler to the Red Lantern buffet every night :)

Someday we should write a cookbook together. Do you remember when we were going to do the social skills one? Well, I think we'd be more successful with cooking since being a stay at home mom has stripped me of any social savvy--I carry around snotted-in tissues, use my hand to transport chewed gum, talk openly about poop and pee--I'm a lost cause now!

oh my gosh julie, you are one of the best cooks there are! I remember you and Dee would invite me over to your apt junior year (yummy!) and I vaguely remember you making cheesecake once....anyway you're very talented. I agree with you - half the battle of cooking is deciding what to make. Where do you get your ideas from? I try Taste of Home, but there are so many recipes that one magazine will last a LONG time.
